Chocolate Brownie Cheesecake

INGREDIENTS

Chocolate brownie Mix

2 eggs

Oil

Water

2 tubs of whipped cream cheese

2 teaspoons of sweetened lime juice

3 tablespoons powdered sugar

1/4 tub cool whip

2 teaspoons vanilla

6 large strawberries

1 cup of semi sweet chocolate chips

1/2 cup of heavy cream

METHOD

Prepare brownie mix with the eggs, oil, water as per box instructions.  Bake in a spring form cake tin and cool completely.

In a bowl add cream cheese and powdered sugar and whisk with an electric mixer until light and fluffy.  Add the vanilla, lime juice, and cool whip, and fold gently in making sure it is very light and airy.

Spoon mix onto cooled brownie mix, smooth out flat and cool for 2 hours.

FOR THE TOPPING

Heat the cream either on the stove or in the microwave until it just reaches boiling point and pour over the chocolate chips.  Keep stirring until the chips dissolve.  Let the mixture cool for five minutes and then pour over the top of the cheesecake.  Let the chocolate set in the fridge for about 4 hours.  Decorate the top with sliced strawberries and powdered sugar.
