McDonalds Style Chicken Nuggets

  • 1 chicken breast, raw
  • 1/2 cup of cornstarch
  • 2 eggs
  • Pinch of salt
  • Pinch of pepper
  • Water as required

 

  1. In a mixing bowl whisk 2 eggs.  Add 1/2 cup of cornstarch, pinch of salt, pinch of pepper and combine until it is a smooth, medium batter consistency.
  2. If it appears too thick, then use 1/2 teaspoon of water at a time to bring it up to this consistency.  You will find that if you have many nuggets to batter, that the cornstarch will start to thicken fairly quickly, so just give it a good stir and a drop or two of water and it will bounce right back.
  3. Chop the chicken breast into 1-2 inch cubes (as desired) and put in the batter.  Stir batter around the chicken pieces, making sure all sides are covered and leave in the batter while you are heating up the oil.
  4. When the oil is hot and starting to bubble add a few chicken nuggets at a time.  Don’t cook many nuggets at once as it will just make the oil drop in temperature and they will be soggy.  Try not to turn the nuggets too often.  I usually let mine get a nice golden color on one side before I turn them.  These nuggets cook very quickly, obviously the smaller the pieces of chicken, the quicker they cook.  I tend to find that mine are cooked within 3-5 minutes.
  5. Drain on a paper towel and serve.
  6. The batter on these chicken nuggets are so tasty!  Very light and crispy too!
